Healthy kebab

Healthy kebab – can you eat it? We got two versions of the recipe, big and small kebab and food we used is nutritionaly richer than usual ones that are part of the standard kebab. It is very tasty and when we open our restaurant – this will be meal of the house every day!
What do I need for healthy kebab?
Mixture for bread
This is the mixture from which you will get 6 equal bread slices if you want to work with a small kebab or 2 large if you are making a big kebab. Nutritional value for large or small kebabs will be calculated according to size.
- 160 grams unsalted peanuts, finely ground
- 180 grams of sour cream 12% milk fat
- 20 grams psyllium powder (slightly more than a jug of spoon)
- 2 eggs
- teaspoon of bicarbonate (2-3 grams)
- 100 grams of hard cheese (gauda, edamer, tilzit)
Fill
If you are making large kebab, put 75 grams of chicken breasts in one because the mixture is enough for 2 large or 6 small ones and put 25 grams of chicken breasts in small one.
- 150 grams of chicken breasts
- one tomato (around 200 grams)
- green salad, leaf
- 10 grams of cabbage, slices
- 5 grams of pork fat
Sauce
- 30 grams of sour cream 12% milk fat
- teaspoon of sweet ground pepper
- few drops of lemon juice
How to prepare healthy kebab?
Bread preparation – around 30 minutes
Put the finely ground peanuts in the bowl, we peeled it manually, you can use a blender or a chopper, just make sure you get the finely ground powder as pictured.
Add the remaining ingredients, grated hard cheese, two eggs, bicarbonate soda, psyllium powder and sour cream.
Mix until you get a nice mixture like one on the picture.
Leave the mixture for five minutes, then place it in the oven at 180 degrees for about 20 minutes.
Meat preparation – around 15 minutes
Cut the chicken breast into thin strips, season with sweet ground pepper and fry it on pork fat. Slice tomatoes, green salad and cabbage to get them ready.
Sauce preparation – around 5 minutes
Mix sour cream, a small teaspoon of freshly ground pepper and squeeze a few lemon drops.
Kebabation – a procedure of forming a kebab – around 3 minutes
- cut the bread on half, brush the top and bottom with sauce and put some meat
- put a row of tomatoes, a row of cabbage, sauce and then meat again, repeat this several times
- add the green salad and fill with the remaining sauce
Quantities for large and small kebabs
The difference is in the amount of meat, you put 75 grams of chicken breasts in the large one, while in the small 25 grams. Of course, put less sauce in smaller kebab but enough that you can distribute it to 6 pieces.
Big kebabs have 2 pieces and 6 small pieces of bread (bottom and top part) – imagine a birthday celebration where you announce to people that there will be kebab for everyone! 🙂

Where can I buy the ingredients?
All the ingredients are available in food markets and stores, and Psyllium powder can be obtained at specialized health food stores.
Bonus tip
Preparation takes a total of 30 minutes, you must do several things at the same time; while baking bread in the oven, fry the chicken in the pan and cut the vegetables. Our recommendation is to eat this for lunch, whether you eat one big or small, this kebab is full of proteins and fats and will keep you saitated for a long time!
