Taste the culture: Tortilla de patata

This is a recipe for a traditional meal from Spain that our international volunteer Luis is bringing to you. He made this recipe for you so you can taste a bit of his culture 🙂 Luis Argüelles is an international volunteer in NGO Eat Different within the project “Experience the Different” financed through European Solidarity Corp program funded by Agency for mobility and EU projects.

What do we need for 4 persons?
- 7 to 8 medium potatoes
- 1 big onion
- 8-9 eggs
- olive oil (around 100ml)
How to prepare it?
1 – Peel and cut the potatoes and onion in thin pieces, not too large
2 – In a skillet with big quantity of oil, we start frying the onion. After five minutes, we add the potatoes with low fire. The oil should cover potato and onion. We add salt, one pinch for potato
3- When the potatoes start to be crispy we take out from the fire. The best texture is with the potatoes half fried and half boiled
4 – We beat the eggs and we take out the mix of potato on onion to integrate with the eggs, but we try to remove the excess of oil in our mix of potato and onion. Mix it with eggs and leave it for five minutes. We can add a pinch of salt here also.
5 – In a good skillet, with medium fire and little bit of oil we put the mix of the eggs, the potato and the onion. We let it cook for 2 minutes, and we turn the omelette with the help of a plate. (This is the more difficult step, do it carefully!). We let the omelette cook 1 minute for the other side
6 – Take it out from the fire and it is ready to eat
How many calories does it have?
It is a bit harder to make correct estimations because of the amount of oil we use for frying the onion and potato and later we dispose it. Let’s say we dispose 90% of the oil and 10% we got left that got integrated into potatoes and olive oil.
In that case, portion for one person would have around 320 calories.
Bonus tip
Always add 1 more egg of the quantity of the potatoes, 7 potatoes = 8 eggs. Also, don’t forget to remove excess of oil from onion and potato once you fry them. That oil you used for frying them is not necessary anymore and can be disposed.
